  • 1 cup of cake flour

Filing:

  • 1 packet of diced bacon
  • 1 teaspoon of garlic. 
  • A packet of spinach.
  • 3 large eggs
  • 1 teaspoon of mustard
  • 1 Teaspoon of Aromat
  • ½ packet of white onion soup
  • 1 ring or block of feta
  • 250 ml of cream.
  • 2 cups of grated cheese
  • ¾ cup of mayonnaise.
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C degrees.
  2. For the crust, mix the margarine, grated cheese, and cake flour. 
  3. Roll out the pie crust and press it into a dish. Put the dish in the fridge for a few minutes.
  4. In a pan over medium heat, sauté the chopped bacon until brown. Add the garlic and chopped spinach, and cook until wilted. Set aside to cool.
  5. In a bowl, whisk together the eggs, Aromat, mustard, white onion soup, feta, cream, grated cheese, mayonnaise, and salt and pepper to taste.
  6. Mix the bacon and spinach mixture over the egg mixture, ensuring that the egg mixture in the previous step is well covered with the bacon and spinach.
  7. Pour the mixture over the crust.
  8. Bake in the preheated oven for 35–40 minutes, or until the center is set and the top is golden brown.
  9. Allow the quiche to cool slightly before slicing and serving.

The lamb potjie recipe embodies the essence of South African cuisine. A potjie (pronounced “poi-kee”) is a traditional cast-iron pot used to slow-cook a variety of ingredients to make a filling and tasty stew. We’ll delve into the world of Lamb Potjie by providing a recipe from one of our chefs.

LAMB POTJIE

Method

  • 2 kgs of Lamb
  • 1 tablespoon of crushed garlic
  • 2 chopped onions
  • 2 tins of crushed tomatoes
  • 1 sachet of tomato paste
  • Fresh rosemary
  • 2 tablespoons of chutney
  • 2 lamb stock dry cubes
  • Salt and pepper for seasoning
  • 2 tablespoons of barbecue spice
  • 2 tablespoons of lamb chop spice
  • 1 tablespoons of paprika
  • 2 packets of mixed veggies
  • 60 ml of cooking oil

Steps:

  1. Heat oil in a potjie pot, add the meat, and fry for five minutes. Add the onion until it’s cooked, then add garlic and crushed tomatoes.
  2. Add some spices, chutney, lamb stock cubes, and some pieces of fresh rosemary and tomato paste.
  3. Add salt and pepper to taste.
  4. Cook for more than 3 hours with the lid on.
  5. After 3 hours add mixed veggies and cook for half an hour without a lid on, reduce the heat.
  6. Serve with fresh rosemary, rice, or bread.
