A potjie (pronounced “poi-kee”) is a traditional cast-iron pot used to slow-cook a variety of ingredients to make a filling and tasty stew. LAMB POTJIE
Method
- 2 kgs of Lamb
- 1 tablespoon of crushed garlic
- 2 chopped onions
- 2 tins of crushed tomatoes
- 1 sachet of tomato paste
- Fresh rosemary
- 2 tablespoons of chutney
- 2 lamb stock dry cubes
- Salt and pepper for seasoning
- 2 tablespoons of barbecue spice
- 2 tablespoons of lamb chop spice
- 1 tablespoons of paprika
- 2 packets of mixed veggies
- 60 ml of cooking oil
Steps:
- Heat oil in a potjie pot, add the meat, and fry for five minutes. Add the onion until it’s cooked, then add garlic and crushed tomatoes.
- Add some spices, chutney, lamb stock cubes, and some pieces of fresh rosemary and tomato paste.
- Add salt and pepper to taste.
- Cook for more than 3 hours with the lid on.
- After 3 hours add mixed veggies and cook for half an hour without a lid on, reduce the heat.
- Serve with fresh rosemary, rice, or bread.
